GREEK TYROPITES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cullen Estate in Allen, Texas in 1984.
Ingredients:
1/2 pound cream cheese
1/2 pound feta cheese crumbled
2 eggs lightly beaten
1 tablespoon all-purpose flour
1/8 teaspoon salt
1 teaspoon grated nutmeg
1 cup butter melted
3 tablespoons butter melted
1 pound commercial filo sheets
Directions:
1. In a bowl combine cheeses, eggs, flour, salt, nutmeg and 3 tablespoons butter.
2. Cover bowl and chill several hours or overnight removing from refrigerator an hour before using.
3. Cut filo into thirds then pile up filo and cover with wax paper and damp towel.
4. Take out one sheet at a time and keep the rest covered.
5. Butter the filo one sheet at a time using a pastry brush and the 1 cup melted butter.
6. Place 1 teaspoon filling 1” from end nearest you.
7. Fold filo back over filling so bottom edge meets left edge forming a right angle.
8. Continue folding back at right angles to make the triangular shape.
9. Bake at 350 for 25 minutes turning once then serve hot.
