This is a super easy cheater salad recipe using a box of Betty Crocker Suddenly Salad Caesar pasta salad mix. You can also add cut-up cooked chicken, ham, or crabmeat. If you make this a day ahead, omit the lettuce, croutons, and parmesan topping and stir them in just before serving. Recipe courtesy of Betty Crocker's Potlucks and Barbecues 120 Plus Recipes and Tips June/July 2009.

7 1/3 ounces betty crocker suddenly mixed salad greens (caesar pasta salad mix)

1 small cucumber, coarsely chopped (1 cup)
1/2 cup red onion, thinly sliced with slices cut in half
1 cup feta cheese, crumbled (4 oz)
