Tomatoes with Greek seasoned vinaigrette. A great summer dish that is quick and easy.
Ingredients:
3 medium tomatoes, cut in eighths
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon greek seasoning mix
Directions:
1. Boil a pan of water, place a tomato in the boiling water for about 10 seconds. Remove and the skin will peel off effortlessly.
2. Cut the tomatoes vertically into 8 wedges each.
3. Place in a bowl with the other ingredients. Toss gently to coat. Let stand for 15 minutes before serving.
