Greek-style Tuna Salad

Tuna salad goes Greek with the addition of feta cheese, olives and oregano
Ingredients:
1 cup orzo, uncooked
1 (61/8) can solid white tuna, drained and flaked
2 cups chopped tomato
1/2 cup crumbled feta cheese
1/4 cup chopped purple onion
3 tbs sliced ripe olives
1/2 cup red wine vinegar
2 tbs water
2 tbs olive oil
1 clove garlic, minced
1/2 tsp dried basil
1/2 tsp dried oregano
green leaf lettuce (optional)
Directions:
1. Cook orzo according to package directions; drainrinse with cold water and drain again
2. Combine orzo, tuna, tomato, feta, onion and olives in a large bowl
3. toss gently
4. Combine vinegar, water, olive oil, garlic,basil and oregano in container of an electric blender;
5. Cover and process until smooth, stopping once to scrape down sides.
6. Pour vinegar mixture over pasta mixture and toss gently.
7. Cover and chill thoroughly,
8. Serve on lettuce leaves if desired.
