Greek Style Pork Pita Wraps With Cucumber Yogurt S...

These are really delicious. Very tasty and light, and refreshing with the cucumber yogurt sauce. Prep time here includes marinating time.
Ingredients:
1/4 cup lemon juice
2 tbs olive oil
1 tbs prepared mustard
1 3/4 tsp minced garlic, divided
1 tsp dried oregano
1 lb pork tenderloin
1 cup chopped cucumbers, peeled and seeded
1 cup plain yogurt
1/4 tsp salt
1/4 tsp dill
pita bread
1/2 cup chopped green onions
Directions:
1. In a large zip top bag, combine lemon juice, oil, mustard, 1 1/4 tsp of the garlic, and the oregano.
2. Add the pork, seal the top and coat the pork with the marinade.
3. Refrigerate for at least 2 hours.
4. Next combine the cucumber, yogurt, salt, dill, and remaining garlic.
5. Cover and chill.
6. Heat oven to 400°.
7. Saving the marinade, place pork in pan lined with foil.
8. Roast for 10 minutes, then brush with remaining marinade.
9. Roast for 15 minutes more, or until the temp of the pork reaches 160°. You want it slightly pink in the center.
10. Split the pitas so you have 2 rounds.
11. Place some sliced pork in the center, top with yogurt sauce and green onions, and roll up.
