Can be eaten as the main dish with pita bread and fresh fruit.
Ingredients:
1 large head romaine or bag of mixed greens
2 small tomatoes diced
half cup diced hothouse cucumber with skin
half of a red onion thinly sliced
third cup feta cheese crumbled, preferably goat's milk feta
pitted kalamata olives- about 20
extra virgin olive oil- about 2 t.
balsamic vinegar- about 1 t.
cavender's greek seasoning, found at your local grocery store
Directions:
1. Tear lettuce into bite sized pieces
2. add all vegetables and olives
3. sprinkle with feta and seasoning, to taste
4. drizzle olive oil and vinegar- toss gently
5. Can be eaten as a sandwich stuffed inside half pieces of warmed pita bread pockets
