Great Summer Salad or alternative to greens salad.
Ingredients:
6 cucumbers
6 tomatoes
1 large onion
4 oz feta cheese
18 kalamata olives
3 tbsp olive oil
1 tsp oregano
1 tsp ground red pepper
Directions:
1. Peel ribbons off of washed cucumbers. Chop cucumbers into 1/4 inch chunks. Halve and slice the tomatoes to 1/4 inch thickness. Chop the onion into 1/4 inch chunks. Slice olives in half. Mix all chopped vegetables in a resealable tupperware. Mix in olive oil, and spices. For best flavor, refrigerate for 1 to 2 hours. Spinkle feta on top prior to serving.
