Great summer salad with BBQ or paired with a zesty Italian dinner. The colors are very palatable, and will look great on your table. This will still taste good the next day, if kept covered with plastic wrap in your fridge.
Ingredients:
2 tomatoes, chopped into bite size pieces
1 seedless cucumber, chopped into bite size pieces
1/4 onions, chopped or 3 -4 green onions, thinly sliced
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon salt (to taste)
2 teaspoons sugar
crushed black pepper
crumbled feta cheese
Directions:
1. Mix all of the ingredients and let sit for a few minutes.
2. Stir again, and taste if it needs more salt, sugar or vinegar.
3. Add crumbled Feta on top before serving.
