YOAD. Very fresh salad!
Ingredients:
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 tablespoon lemon juice
1/2 teaspoon dried oregano
1 garlic clove, minced
1/2 teaspoon honey
salt & freshly ground black pepper, to taste (optional)
1 head romaine lettuce, torn
1 tomato, quartered
4 pepperoncini peppers
1 small cucumber, sliced
1/2 cup crumbled feta cheese
3 sprigs fresh dill, chopped
1/2 green bell pepper, sliced into rings
8 kalamata olives
Directions:
1. Combine all dressing ingredients except salt and pepper.
2. Mix well.
3. Season to taste with salt and pepper if desired; let stand 5 minutes.
4. Combine all salad ingredients in large bowl; toss with dressing.
