This fresh, delicious salad requires zero cooking and is ready in less than ten minutes! Get a taste of the Meditteranean.
Ingredients:
2 large tomatoes, cut into chunks
1 large cucumber, cut into chunks
2 stalks green onions, diced
1 tablespoon fresh cilantro, finely chopped
2 tablespoons low-fat feta cheese, crumbled
2 tablespoons pitted black olives, sliced
1 garlic clove, finely chopped
1 tablespoon lemon juice
Directions:
1. 1. Place the first seven ingredients in a large salad bowl and toss gently.
2. 2. Drizzle the lemon juice and olive oil over the salad.
3. 3. Sprinkle the oregano, sea salt and black pepper on top.
4. 4. Gently stir all items again to ensure seasoning is distributed evenly and serve.
5. (Optional: lay over a bed of romaine).
