Feta, Greek olives and herbs- a classic. This is a great side dish for your Greek dinner. It is not overpowering just a great medley of flavors. Try it with souvlaki..you won't be disappointed.
Ingredients:
2 cups chicken stock
1/2 teaspoon salt
2 garlic cloves, minced
2 teaspoons olive oil
1 cup white rice
3 green onions
1 cup tomato
1/4 cup black olives
3 ounces feta
1/2 teaspoon oregano
1/2 teaspoon rosemary
1/4 teaspoon thyme
Directions:
1. In a medium saucepan, bring the chicken stock, salt, garlic and oil to a boil. Add long-grain white rice; return to a boil.
2. Reduce heat, cover and simmer until rice is tender and liquid is absorbed, about 20 minutes. Remove from heat.
3. Stir in remaining ingredients. Serve hot.
