Greek Potato Salad

This is great hot or cold.
Ingredients:
2 lbs unpeeled new potatoes, cooked and cooled
1 medium yellow onion, sliced
1/2 cup fresh parsley, chopped
1/2 cup olive oil
1/4 cup white wine vinegar
2 teaspoons oregano, crushed in your hands (or you can used dried oregano flakes)
garlic, to rub bowl with
Directions:
1. Cut up cooked potatoes.
2. Toss with remaining ingredients.
3. Chill and serve next day, or you may eat it hot immediately.
