Add a Mediterranean touch to potatoes in this simple recipe, flavoured with wine, garlic and thyme.
Ingredients:
1 1/2 lbs potatoes, peeled and quartered
6 sprigs thyme
2 garlic cloves, lightly crushed
7 ounces small tomatoes
salt & freshly ground black pepper
2 tablespoons olive oil
7 tablespoons white wine
Directions:
1. Preheat the oven to 400°F
2. Place the potatoes, thyme, garlic and tomatoes in a roasting tray. Season with salt and freshly ground pepper.
3. Pour over the olive oil and white wine, mixing well.
4. Cover the roasting tray with kitchen foil, sealing the edges well.
5. Bake for 30 minutes until the tomatoes are pulpy and the potatoes are falling apart.
