Good for lunch or a light dinner. Ingredients:
1/3 cup plain yogurt |
1/3 cup sour cream |
1 (4 ounce) package crumbled tomato and basil feta cheese (can sub plain feta and add chopped fresh basil) |
1/4 teaspoon kosher salt |
1/8 teaspoon black pepper |
1 1/2 cups diced cucumbers |
1 cup seeded chopped tomato |
1/4 cup chopped pitted kalamata olive |
3 tablespoons chopped red onions |
1 cup roasted garlic hummus, divided |
6 pita pockets, halves |
Directions:
1. Combine first five ingredients until well mixed. Lightly stir in cucumbers, tomatoes, olives and onion. Spread approximately 2 tablespoons hummus on inside of each pocket bread; fill with sour cream mixture, dividing evenly. |
