Greek Meatball Appetizers

These savory meatballs are flavorful on their own, but add the quick and easy dipping sauce, and watch your guests gobble them up! The meat mixture is even better if left in the fridge for an hour or two prior to baking and the sauce can be made ahead of time! Read more !
Ingredients:
1lb lean ground beef
1lb ground lamb, venison, chicken, turkey
about 1/4 cup dry minced, or fresh grated onion
1 cup fine bread crumbs
3 cloves garlic, minced
1t dry greek or mediterranean seasoning(with lemon, coriander, garlic, parsley, oregano, etc)
1t fresh parsley, minced(or sub about 1t or so, dried)
1t fresh mint, minced(or sub 1 1/2t dried)
1t ground cumin
1t ground coriander(decrease to 1/2 if your greek seasoning has it in it
1/2-2t crushed red peppers
1t dijon
1 egg
couple dashes liquid smoke
1/4 cup feta or goat cheese, crumbled
a couple t plain greek yogurt
goat cheese dressingor dipping sauce(thin out with a touch of buttermilk or more yogurt/sour cream, if needed, for dipping consistency
Directions:
1. Combine all meatball ingredients in large bowl.
2. Mix well with hands, but do not over work.
3. Let rest in fridge for a couple hours, or, just at room temperature.
4. Form mixture into about 1T(I use my cookie scoop) sized balls and place on wire rack over cookie sheet, or similar set up.
5. Bake at 350 for about 17-20 minutes, just until cooked through.
6. Serve with toothpicks or skewers with the dipping sauce.
