Greek Lemon Soup

This is a very simple elegent soup. Perfect as a side to a fish or dish.
Ingredients:
6 cups vegitable broth
2 cups cooked rice
zest of one lemon
12 oz silken tofu
2 tbs dill, snipped
1/4 cup lemon juice
white pepper to taste
Directions:
1. In large pan/pot, bring broth, rice, and lemon zest to a boil, then reduce to simmer for 15 minutes.
2. Remove 2 cups of broth and rice to a blender, add tofu, and blend (carefully, as it's hot) till smooth.
3. Return to pot, whisking it into the broth and rice soup in the pot. Whisk in dill and lemon juice. Heat through, and serve.
