For those who would like to eat something light it is an excellent combination of vegetables, (full of vitamin C, vitamin A, etc.,) from protein (feta) and the best is the olive oil which reduces the LDL (bad cholesterol). This salad is the most characteristic of the Mediterranean way of eating. Combine it with bread or rusk and the combination is perfect.
Ingredients:
2 tomatoes cut in slices
1 cucumber (small) cut in slices
1 green pepper cut in slices
1 onion cut in slices
1 spoonful of caper (usually we use the berries but the leaves can be used as well)
1/2 table spoonful of dried oregano
10 black olives
feta cheese, cut in pieces
extra virgin olive oil
wine vinegar
salt
Directions:
1. Wash and cut the vegetables
2. Add the olive oils, the caper and all the other ingredients and mix well.
