Greek Garden Salad

Delicious salad that's a combination of Italian and Syrian. Great in a pita pocket.
Ingredients:
3c torn romaine
1 plum tomato,sliced
1/2c julienned sweet red pepper
1/2c sliced,seeded,peeled cucumber
1/3c chickpeas
1/4c sliced fennel bulb
1/4c chopped celery
6 pitted ripe or greek olives
1 green onion,thinly sliced
dressing
2tbs lemon juice
1tbs olive oil
1 garlic clove,minced
1tsp fresh minced cilantro
1 tsp water
1/2 tsp minced fresh mint or 1/8 tsp dried mint
1/2 tsp minced,fresh oregano or 1/8tsp dried oregano
1/2tsp grated lemon peel
dash of salt and pepper
1tbs crumbled feta cheese
Directions:
1. In a small serving bowl,combine first 9 ingredients.
2. For dressing,in a jar with tight fitting lid,combine lemon juice,oil,garlic,cilantro,water,mint,oregano,lemon peel,salt and pepper;shake well. Drizzle over salad;toss to coat.. Sprinkle with cheese.
3. I like more cheese!
