Greek Coleslaw is a perfect side dish for pita bread sandwiches.
Ingredients:
2 tablespoons nonfat sour cream alternative
2 tablespoons red wine vinegar
1/2 teaspoon sugar
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cabbage
1/4 cup coarsely shredded carrot
1 tablespoon chopped cucumber
1 tablespoon crumbled feta cheese
1 1/2 teaspoons chopped green onions
1 1/2 teaspoons chopped salad olives
1 1/2 teaspoons sliced almonds, toasted
Directions:
1. Combine first 6 ingredients in a small bowl, stirring with a wire whisk until blended.
2. Combine cabbage and remaining ingredients in a medium bowl. Spoon vinegar mixture over vegetables; toss gently to blend.
