This was the outstanding tasting sample at the January cookoff in Forsyth. IL. I have copyed the recipe exactly as the handout recipe the DMH Wellness Center gave me.
Ingredients:
1 lb ground turkey
1 teaspoon olive oil
1 large onion
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon dried thyme
2 bay leaves
1/2 teaspoon black pepper
1 (15 ounce) stewed tomatoes
1 (15 ounce) diced tomatoes
1 (15 ounce) artichoke hearts (not marinated)
1 (15 ounce) chickpeas or 1 (15 ounce) garbanzo beans
1 (8 ounce) can black olives (sliced or chopped)
crumbled feta
Directions:
1. In a soup pot, heat oil and add chopped onion and turkey.
2. Brown meat.
3. Add garlic, oregano, thyme, bay leaves and pepper.
4. Cook 1 minute or so.
5. Add tomatoes with juice, drained chickpeas, drained olives and chopped artichoke hearts.
6. Stir well.
7. Simmer for about one hour.
8. Serve with feta sprinkled on top.
