Greek Chicken Salad

A really good salad with a different vinagrette
Ingredients:
2 chicken breasts
1 tbs greek seasoning
1/4 cup of olive oil
juice of 1/2 lemon
3 cups of mixed greens
assorted veggies ( your choice)
1/2 cup of extra virgin olive oil
2 tbs red wine vinegar
1 tbs fresh lemon juice
1 tsp salt free greek seasoning
1 tsp honey
1 tbs gorgonzola cheese
2 tbs feta cheese
Directions:
1. Combine 1 TBS of Greek seasoning with 1/4 cup of olive oil and the juice of 1/2 lemon. Mix and marinate the chicken at least 4 hrs or overnight.
2. Preheat oven to 350
3. In a oven proof skillet skillet on top of the stove over a med-high heat place pan and allow to come up to temp ( around 1-2 min)
4. Add chicken and saute for 3 minutes, turn over and repeat for 3 more minutes.
5. Place in oven and bake for 15 minutes.
6. Remove and allow to rest for 10 minutes.
7. Meanwhile place 1/2 cup of extra virgin olive oil in a bowl, the greek seasoning,red wine vineagr,honey, and lemon juice and whisk for 30 seconds.
8. Add the gorgonzola and feta and mash briefly and whisk for 30 seconds.
9. Arrange salad then slice chicken into 1/2 in slices and drizzle with vinagrette.
