I found a recipe in my local paper and modified it to this! It is very good and a great way to trick your kids into eating spinach! How it is called Greek I do not know.
Ingredients:
6 pieces catfish, about 1 1/2 pounds
2 onions, sliced thin
1 tablespoon minced garlic
olive oil, about 2 tbs
1 (10 ounce) box frozen spinach, cooked 1/2 way
4 cups diced tomatoes with juice
cajun seasoning
1 tablespoon lemon pepper
1 teaspoon oregano
lemon (to garnish)
Directions:
1. In a skillet brown catfish and put to the side.
2. In a Dutch oven place onions, garlic and olive oil and cook until onions are almost done.
3. Add tomatoes and seasoning and cook on medium for 15 minutes or until juices are reduced in half.
4. Add spinach to the mixture.
5. Add catfish and simmer covered for 10 minutes or until the spinach and catfish are done.
