Greek Bow-Tie Pasta Salad

The bow-ties and anchovy paste make a neat difference. This is fabulous with just about anything in the summertime.
Ingredients:
1 lb bow tie pasta
1/2 cup extra virgin olive oil
1/3 cup lemon juice (probably about one lemon's worth)
1 tablespoon anchovy paste
2 garlic cloves, minced
1 teaspoon dried oregano leaves, crumbled
1 pinch each salt and pepper
1 english cucumber, diced
2 cups small cherry tomatoes
2 cups good quality black olives, pitted
1 cup chopped red onion
1/2 cup chopped fresh parsley
1 cup finely diced feta cheese (about 4 oz/125 g)
Directions:
1. In a large pot of boiling salted water, cook pasta for 8 to 10 minutes or until almost tender but firm; drain well let cool.
2. Meanwhile, whisk together oil, lemon juice, anchovy paste, garlic, oregano, salt and pepper; toss with pasta.
3. Add tomatoes, sliced olives (leave whole if small), cucumbers, onion and parsley; toss to coat well. Gently stir in feta cheese.
4. Chill until ready to eat.
