I love this recipe it's cheap and tasty. You might have a hard time getting the family to take the first bite though. I like to spread this on a sandwich bun and top with tomato, onion and Dijon mustard or use as a bean dip for corn chips.
Ingredients:
3 slices of uncooked bacon, diced
1/2 a medium onion, diced
3 garlic cloves, diced
2 cups chicken broth
3 1/2 cups great northern beans, cooked cans drained (or 2(15 oz.)
1/2 tablespoon parsley
1/8 teaspoon cumin
1/8 teaspoon red pepper flakes
1/8 teaspoon black pepper
salt
Directions:
1. In a medium sized sauce pan over med.-low heat add first three ingredients stirring often until onion has become tender and edges start to brown.
2. Add remaining ingredients in order listed stir well. Continue to cook over med.-low heat for twenty minutes stirring occasionally.
3. Remove from heat pour off liquid into a bowl.
4. Mash beans with potato masher adding liquid reserved in bowl gradually until desired texture is reached.
