I got this from my brother-in-law a couple of years ago. It is so delicious and is far superior to a prepared box mix. I am 57 yrs old so that tells you how old this recipe could be. :P *We don't usually keep buttermilk - so, I put a tbsp of vinegar in regular milk to sour it.
Ingredients:
2 1/2 cups sifted flour
1 1/4 teaspoons baking powder
1 1/2 cups sugar
1 teaspoon salt
1 1/2 teaspoons baking soda
2/3 cup buttermilk
1/4 cup mashed banana
1/2 cup oil
2 eggs
1 teaspoon vanilla
2/3 cup chopped pecans or 2/3 cup walnuts
Directions:
1. Sift together flour, baking powder, sugar, salt and soda.
2. Add buttermilk, bananas, oil, eggs, and vanilla, then beat for two minutes.
3. Fold in chopped nuts.
4. Bake in greased and floured pans at 350 degrees until it test done. Approximately 50 - 60 minuters.
