I love the flavors of Caesar salad. I'm tired of the standard green bean casserole. So, this dish is the marriage of the two!
Ingredients:
1 1/2 pounds fresh green beans, cut into 1-inch pieces
2 tbsp. olive oil
1 tbsp. sherry vinegar (or cider)
two shakes from the worchestershire bottle
optional - 2 tsp of anchovy paste
1 tsp. dijon mustard
2 tbsp.finely chopped shallots
1/4 tsp. salt-don't add salt if using anchovy paste
1 clove garlic crushed and minced
1/8 tsp. caynne pepper
1/3 cup. dry bread crumbs
1/3 cup grated parmesan cheese
2 tbsp. butter or margarine, melted
paprika
Directions:
1. Cook green beans in one inch of boiling salted water, uncovered about 5 minutes.
2. Cover, reduce heat to low cook until nearly tender; drain.
3. Whisk oil, vinegar, worchestershire, mustard, anchovy paste, and pepper.
4. Don't add salt if using anchovy paste.
5. Toss beans, the whisked dressing, finely chopped onions, and minced garlic until coated evenly.
6. Pour into ungreased 1-quart casserole.
7. Mix bread crumbs, cheese and margarine or butter; sprinkle over beans.
8. Sprinkle with paprika.
9. Cook uncovered in 350 degrees oven until heated through, 15 to 20 minutes.
