Grated Carrot And Orange Salad

Unusual and refreshing
Ingredients:
1 tbsp thyme honey
1 tbsp orange flower water
3 tbsp lemon juice
2-3 tbsp orange juice
1 tbsp ground of slivered almonds
1/2 tsp salt
5 cups carrots, grated
2 oranges, each peeled and cut into 8-10 pieces
1 tbsp extra virgin olive oil
2 tbsp pine nuts
mint leaves, to garnish (optional)
Directions:
1. Put the honey in a serving dish, and then mix in the orange flower water and lemon juice and orange juice.
2. Add the almonds, salt, carrots and oranges.
3. Heat the oil in a small pan and sauté the pine nuts until golden.
4. Then remove from pan and add to the salad.
5. Toss the salad (if desired, garnish with mint) and serve or chill for later use.
