Ingredients:
1 bunch(es) red grapes
evoo
kosher salt
baguette slices
goat cheese
pistachios, chopped
honey
Directions:
1. Toss grapes in EVOO and spread on a parchment-lined baking sheet. Sprinkle with salt. Roast in 450 F oven for 12-15 minutes. Meanwhile, smear toasted baguette slices with goat cheese that has been brought to room temperature. Spoon roasted grapes and their pan juices over each baguette slice. Top with a sprinkle of toasted chopped pistachios and a drizzle of honey, if desired.
