Grapefruit, Onion and Basil Salad

This is an interesting and tasty Giada recipe. Great make-ahead recipe, put everything together except the balsamic vinegar, evoo, salt and pepper and store in the fridge until time to serve! The original recipe calls for olives, but I prefer to substitute with feta cheese.
Ingredients:
1 large grapefruit
1/2 red onion, thinly sliced
2 tablespoons fresh basil, thinly sliced into ribbons
2 tablespoons fresh chives, chopped
1/4 cup feta cheese, crumbled
1 1/2 tablespoons balsamic vinegar, aged
1 1/2 tablespoons extra virgin olive oil
salt and pepper
Directions:
1. Cut ends off of grapefruit, set grapefruit up on cut side. Cut the rind off by slicing sections from the top to the bottom, working your way around until you are left wtih just the flesh of the grapefruit.
2. Slice grapefruit into rings. Place grapefruit rings on serving platter in an overlapping fashion.
3. Sprinkle grapefruit with sliced onion, basil, chives and feta cheese.
4. Drizzle balsamic vinegar and olive oil over the top. Season with salt and fresh cracked black pepper.
