This frozen treat is the perfect combination of tangy and sweet flavors. And while the recipe calls for a jar of grapefruit sections as a shortcut, it works great with fresh grapefruit sections, too. A 26-ounce jar of grapefruit sections is equivalent to 2 1/2 cups, or about 2 large grapefruit.
Ingredients:
1 large orange
1 tablespoon measures-like-sugar calorie-free sweetener
1 (26-ounce) jar grapefruit sections, undrained
mint sprigs (optional)
Directions:
1. Peel and section orange over a bowl; squeeze membranes to extract juice. Reserve juice for another use; discard membranes.
2. Combine orange sections, sweetener, and grapefruit in a blender or food processor; process until smooth. Pour mixture into a 13 x 9-inch baking pan. Cover and freeze 2 hours, stirring every 30 minutes with a fork. Let stand 5 minutes before serving. Garnish with mint sprigs, if desired.
3. carbo rating: 13
