Growing up I never would eat heated cereal. My mother would make me toasted grapefruit with cinnamon and sugar so I would have a warm meal in my belly before leaving for school. I hadn't thought about that in years until I came across a similar recipe in Susie Fishbein's Kosher by Design Lightens Up.
Ingredients:
1 pink grapefruit
1 teaspoon apricot preserves, divided
1/2 teaspoon cinnamon, divided
2 stevia, packets
Directions:
1. Preheat the broiler to high with the rack 6 inched below the element.
2. Slice the grapefruit in half.
3. Loosen the segments with a knife or grapefruit spoon. Discard the seeds.
4. Pat the top of each half with a paper towel to absorb some of the juice.
5. Spread half of the preserves on each half of the grapefruit.
6. Sprinkle the cinnamon and stevia on top.
7. Place the grapefruits on a jelly-roll pan and place under the broiler for 3 minutes. Watch it carefully so that it doesn't burn.
