Grant's Low Calorie Jambalaya

Based on the 'Jambalaya Made Good' recipe, this jambalaya uses low calorie smoked sausage and all white meat chicken. This recipe is absolutely delicious!
Ingredients:
1 1/2 cups brown rice
1 cup tomato sauce
1 1/2 cup tomatoes, diced
1 cup onions, chopped
1 cup celery, chopped
1 cup bell pepper, chopped
7 oz light smoked sausauge, sliced
6 oz chicken breast, cooked and shredded
1/2 lb. raw shrimp
3 cups chicken broth, canned
1 tsp garlic, minced
1 tsp olive oil
Directions:
1. Preheat oven to 350 degrees.
2. Add olive oil, celery, onions, bell peppers and minced garlic to an oven-save dutch oven.
3. Cook over low heat until wilted.
4. Add rice, broth, tomato sauce and tomatoes. Increase heat and bring to a boil.
5. Add chicken, sausage, and shrimp and return to a boil.
6. Remove from heat, cover and bake for 1 1/2 hours.
7. Remove from oven (DO NOT STIR!) and let stand 20 minutes. Rice should be soft. Now you can stir!
