This is a great recipe for energy providing granola bars that I use on hiking and kayaking trips.
Ingredients:
2 cups rolled oats
1/4 cup wheat germ
1/2 cup dried cranberries
1/2 cup chopped dates
1/2 cup shredded coconut
1/4 cup sunflower seeds
1/3 cup slivered almonds
1/2 teaspoon cinnamon
1 pinch salt
1 tablespoon melted butter
1/2 cup brown sugar
1/4 cup maple syrup
1/4 cup honey
1 egg, lightly beaten
1/2 teaspoon vanilla
Directions:
1. Preheat oven to 350 degrees F.
2. Spray a 9-inch square baking pan with non-stick cooking spray.
3. Combine oats, wheat germ, dried fruits, coconut, sunflower seeds, almonds, cinnamon and salt in a large bowl.
4. Combine melted butter and brown sugar in a small bowl until well mixed and any lumps removed.
5. Stir in maple syrup, honey, egg and vanilla until smooth.
6. Add liquid mixture into dry mixture until dry ingredients are moistened.
7. Press mixture firmly and evenly into pan.
8. Bake for about 20 minutes, or until golden and firm.
9. Cool completely before cutting into squares or bars.
10. Note: other varieties of dried fruits and nuts may be substituted to suit your likes and dislikes.
