This granola can be eaten plain, as a cereal, or baked into other wholesome snacks. It is healthy, and satisfying and can be taken anywhere.
Ingredients:
2 1/2 c rolled oats
1/2 c coconut, shredded
1/2 c toasted wheat germ
1/4 c sunflower seeds
1 tbsp sesame seeds
1/4 c chopped walnuts
1/4 c chopped pecans
1/4 c melted margarine, non-hydrogenated
2 tbsp water
1/4 c honey
1/4 peanut butter, non-hydrogenated
1/2 tsp sea salt
1 tsp vanilla
1/4 c currants, and or dried cranberries, or other dried fruit
1/4 c ground flax seed
Directions:
1. Preheat oven to 350°F, set aside 1 cookie sheet with sides.
2. Combine oats, coconut, wheat germ, seeds and nuts in a large bowl.
3. In another container, mix together the margarine, honey, water, salt and vanilla extract. Pour over grains, stirring thoroughly.
4. Spread mixture thinly on cookie sheets and bake for 25-30 minutes, stirring frequently. Oats should be crisp and brown, but coconut should not be burned.
5. Allow to cool thoroughly, then add fruit and flax and place in an airtight container for storage. Can be stored up to 3 weeks without refrigeration.
