This is a recipe from my husbands granny. I'm not sure where it originated, but I know it is one of our family favorites! I have substituted low fat cheddar cheese before, and my family never could tell the difference.
Ingredients:
1 lb lean ground beef
2 medium vidalia onions, sliced
4 red potatoes, peeled and thinly sliced
2 cups shredded cheddar cheese
1 (10 1/2 ounce) can condensed cream of mushroom soup (i like campbells healthy request)
1 (10 1/2 ounce) soup can water
salt
Directions:
1. Preheat oven to 350 degrees.
2. In a dutch oven, brown hamburger meat. Drain off fat.
3. In the dutch oven, top meat with all of the sliced onions, then the potatoes.
4. Salt the potatoes.
5. Top with shredded cheese.
6. Combine soup and soup can of water in a bowl and blend with spoon until smooth. Spread soup mixture over the cheese.
7. Bake covered at 350 for about an hour.
