Granny Smith Cake

This is a recipe I picked up at a food fair, from a booth promoting apples. Since quality Granny Smith apples are available year-round (here in North America, at least), this is a good apple cake to make any time of the year.
Ingredients:
1/2 cup chopped walnuts
1 (18 ounce) box spice cake mix
1 (3 1/2 ounce) box instant butterscotch pudding mix (substitute vanilla, if you wish)
4 eggs
1/2 cup canola oil (or any vegetable oil)
1/2 cup cold water
3 medium granny smith apples, peeled, cored and coarsely chopped
1 cup golden raisin (optional)
icing sugar, for garnish
Directions:
1. Preheat oven to 325°F.
2. Grease and flour a tube or bundt pan, then sprinkle walnuts in the bottom; set aside.
3. In a large bowl, combine cake mix, pudding mix, eggs, oil and water; with mixer at medium speed, beat for 3 minutes or until well blended.
4. Stir in chopped apples, plus raisins if desired.
5. Pour batter into prepared pan and bake in preheated oven for 55 to 65 minutes or until a tester inserted in centre comes out clean.
6. Cool in pan for 15 minutes, then turn out onto a rack and cool completely.
7. Dust with icing sugar, if desired.
