Grannie's Lemon Pie

Grannie lived to be 102 years old so we ate this delicious pie for decades and always asked for it again.
Ingredients:
2 tablespoons cornstarch
3/4 cup sugar
1 cup boiling water
1/4 cup fresh lemon juice
1 tablespoon butter
2 eggs
1 pinch salt
lemon rind
2 tablespoons sugar
Directions:
1. Combine cornstarch and sugar in a double-boiler. Add water slowly, stirring constantly. Cook until thick and smooth.
2. Add slightly beaten egg yolks, butter, lemon rind, juice and a few grains of salt. Cook 2 minutes.
3. Pour into shell and cover with meringue made of egg whites and 2 tablespoons of sugar.
4. Bake 325 degrees for 20 minutes.
