5-Ingredient Fix Contest Entry. One of my favorite things my grandfather ever made was potato pancakes. This is my version, a bit easier than shredding potatoes like he did!
Ingredients:
1 (24 ounce) package simply potatoes traditional mashed potatoes
1/3 cup flour, keep more on hand if needed
1 tablespoon milk
3 tablespoons butter
salt or pepper
Directions:
1. Makes 8-10 thin or 4-5 thick pancakes.
2. Season mashed potatoes with salt and pepper. Add 1/3 cup flour and milk, if potatoes seem too runny and more flour as needed. Melt half the butter in frying pan, you may need to add more as you continue cooking. Scoop enough potatoes to make a pancake as thick or thin as you prefer. Cook pancakes until golden brown, about 5 minutes per side. Add a pad of butter and salt to each pancake and enjoy!
