My grandmother used to make this and everyone loved it! I make it often for my family and, even though most of them don't like squash, they always ask for seconds of this casserole! Tip - add cheese to the mixture as well as the top to make a creamier casserole. Prep time is a guesstimate!
Ingredients:
3 squash, sliced
2 tablespoons milk
4 tablespoons butter
1 egg
1/4 cup onion, finely chopped
salt and pepper
1 1/2 tablespoons sugar
1/2 cup sharp cheddar cheese, shredded
1 cup ritz cracker, crushed
Directions:
1. Preheat oven to 350 degrees.
2. Boil squash about 15 minutes, or until tender. Drain.
3. Add milk, butter, egg, onion, salt, pepper, and sugar to the squash. Mix well.
4. Pour mixture into a 9x9 or 8x8 casserole dish.
5. Sprinkle cheese and then crackers on top of casserole.
6. Bake at 350 for about 30 minutes.
