These cookies are from my mother's church recipe book, modified by my grandmother with a little bit of lemon extract. Mom makes them for every occasion, we had to hide them when we got a box at our dorms since everyone loved them as well! (Time does not include rolling and cutting, cook time is per tray)
Ingredients:
1 1/2 cups butter
2 cups sugar
4 eggs
2 teaspoons vanilla extract (or 1 tsp. of vanilla and 1 tsp. lemon extract)
5 1/2 cups flour
2 teaspoons baking powder
1 teaspoon salt
Directions:
1. Cream together butter and sugar. Add eggs and vanilla. Mix completely. Add baking powder and salt. Mix in 4 1/2-5 cups of flour, one at a time, until you can handle the dough. Use the rest of the floor on the board as you roll the dough. The cookies will get tough if too much flour is used. Roll out to 1/2 thick. Bake at 400 for 8 minutes. Frost when cooled.
