Our family also calls this *Funeral Cake* as it is a standby to bring to funerals at church. Mine never tastes nearly as good as my MIL's.....sometimes when I'm hungry for it I cheat and just make a white cake mix and top with the homemade frosting!
Ingredients:
2 cups cake flour
2 cups sugar
1 cup boiling water
6 egg whites
1/3 teaspoon salt
1/2 teaspoon cream of tartar
2 teaspoons baking powder
1 teaspoon vanilla
6 egg yolks
3/4 cup sugar
3/4 cup cream
chopped nuts
Directions:
1. Cake: Sift flour and sugar together 3 times, add boiling water and let stand overnight.
2. In the morning beat the egg whites, salt, and cream of tarter.
3. When stiff add baking powder and vanilla.
4. Add to overnight batter.
5. Fold into prepared 9x13 pan, bake at 350 for 45 minutes.
6. Frosting: Cook ingredients in double boiler until thick.
7. Frost cake and sprinkle with nuts.
