Lebanese-style green beans were always part of the family dinner table at my grandparents' house. In my opinion, they are a quintessential vegetarian comfort food. They are best served along side something that can sop up the delicious garlicky sauce. I recommend pilaf or mujadarrah.
Ingredients:
1 lb fresh green beans, break in half and remove stems
1 small onion, chopped
3 large garlic cloves, minced
1/4 cup extra virgin olive oil
1 cup tomato sauce (i think grandma used prego's old world style)
1 cup water
1 vine ripened tomato, diced
salt and pepper (don't skimp on the salt)
Directions:
1. In a medium sized saucepan, saute the garlic and onions in olive oil until the onions become translucent.
2. Add the beans, cover, and allow them to steam in their own moisture for about 15 minutes.
3. Add 1 cup water, tomatoes, tomato sauce, cover, and cook for 30 minutes.
4. Add salt and pepper to taste.
