Grandmas Fried Potatoes

This is the way Grandma taught me to fry potatoes.
Ingredients:
5 or 6 idaho potatoes
oil
1 tbs. butter (optional)
1 tsp. parsley flakes (optional)
Directions:
1. Peel and wash potatoes.
2. Cut into little cubes.
3. Put enough oil in the bottom of skillet to cover bottom of skillet well.
4. Heat oil over medium heat until hot.
5. Carefully put in the potatoes,cover with a lid and stir occasionally.
6. Fry for about 10 minutes covered then remove lid and fry until browned a little.
7. If you want butter and parsley add this last 5 minnutes of cooking.
8. Place on paper towels to drain oil.
