Grandmas Fried Apple Pie

My grandma i don't think ever made these with fride biscuits, she always made hers by hand and they were always great! this one for her it as i remember how she made them, she learn from her mama in the 1890's
Ingredients:
fried apple pies
3 med. golden delicious apples
2 tsp. cornstarch
1/2 tsp. cinnamon
1/3 c. sugar
1 tsp. lemon juice
1/4 tsp. nutmeg
peel, core and slice each apple into small cubes. in 2 quart sauce pan combine sugar, cornstarch, lemon juice, spices; stir in apples until they are moistened. cover and cook apples over low heat until tender stirring frequently. remove from heat. cool at room temperature 1 hour and refrigerate.

1 1/2 c. all purpose flour
1/2 tsp. salt
1/3 - 1/2 c. milk
1 tsp. baking powder
1/3 c. shortening
vegetable oil for frying
Directions:
1. In medium bowl combine flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually stir in enough milk until dough clings together. Roll in ball and wrap in plastic wrap and chill 30 minutes or longer. Cut dough into 16 pieces. Shape each into ball, with floured rolling pan - roll each into 4 1/2 inch circle. Put rounded tablespoon of apples in center of each. Moisten edges of dough with milk. Fold dough in half to form semi-circles. Press curved edge with tip of floured fork to seal. Turn pie over, press edge of other side. In 3 quart sauce pan heat about 1/2 inch of oil to 375 degrees. Fry 2 to 3 pies at a time until golden brown (about 1 minute). Turn with tongs. Drain on paper towel.
