This recipe was given to my grandmother when she was pregnant with my father- a kind neighbor had given her a loaf and it was so delicious she just had to have the recipe! Our family has been making it ever since. It is very moist and full of delicious banana flavor!

4 ripe bananas (the riper the better)
1 cup sugar
1 teaspoon vanilla
1 egg
1/2 cup canola oil
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts, chopped (optional)
Directions:
1. Mash bananas well. Mix in the sugar and let stand for 10 minutes.
2. Grease and flour loaf pan and preheat oven to 350.
3. Add vanilla, egg and oil to the banana mixture.
4. Mix in flour, baking soda and salt.
5. If you choose, mix in walnuts.
6. Pour batter into prepared loaf pan and bake for 60-90 minutes (until a toothpick inserted into the center of the loaf comes out clean.
