Grandma Bettys Carrot Cake

One of my grandmother's signature dishes. Even little kids will eat there vegetables when they come in this cake.
Ingredients:
2 cups flour
2 cups sugar
1-1/2 cups oil
3 eggs, beaten
1-1/2 cups coconut, shredded
1 cup crushed pineapple with juice
2 cups grated carrot
2 tsp baking soda
2 tsp vanilla
2 tsp cinnamon
2 tsp nutmeg
1 tsp salt
2 cups walnuts, chopped
Directions:
1. Combine all dry ingredients.
2. Add beaten eggs, oil, pineapple, vanilla and carrots.
3. Fold in nuts.
4. Pour in to 9x13 pan. No need to grease.
5. Bake for 20 minutes at 350 degrees.
6. Turn down to 300 degrees and cook for an additional hour.
7. Cool completely before icing.
8. Top with Grandma Betty's Cream Cheese Frosting!
