Grandma Bertie's Gluten Free Chard Wrapped Meatballs

An old family recipe that everyone is sure to love. Beef can be substituted for the bison.
Ingredients:
1 lb bison meat
12 ounces fresh swiss chard
2 rice cakes
1 egg
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon allspice
1/8 teaspoon nutmeg
Directions:
1. 1. Crush rice cakes.
2. 2. In a large bowl, mix all ingredients together, by hand.
3. 3. Remove large stems from the chard.
4. 4. Make eight meatballs
5. 5. Wrap each meatball in a chard leaf.
6. 6. Heat a frying pan with the 1 TBSP oil.
7. 7. Cook meatballs, covered, for 30 minutes or until done.
