Souffles were an absolute at Swanson's Wine Bar & Bistro. You waited for it in eager anticipation. Diners would order dessert first and we would scramble to get the timing right to serve the hot fluff at it's peak.
Ingredients:
1/4 cup of confectioner's sugar
5 egg yolks
3 1/2 tablespoons of butter
1 3/4 cups of hot milk
1 tablespoon of cold butter
3 tablespoons of grand marnier
2 ladyfingers halved
3 more tablespoons of grand marnier
6 egg whites
pinch of salt
butter and granulated sugared souffle dish (six cup size)
1 extra tablespoon of granulated sugar to finish the top
Directions:
1. In a sauce pan, beat the 1/4 cup of confectioners sugar and the egg yolks.
2. Stir in the flour.
3. Add the hot milk and cook stirring rapidly until mixture is smooth and thickened. Do not let it boil. Remove from heat.
4. Add a knob of butter to cool the mixture (one tablespoon).
5. Stir in the first 3 tablespoons of Grand Marnier.
6. Soak the ladyfingers, halved in the second round of Grand Marnier.
7. (I tempted to say take a sip of Grand Marnier here, but I digress)
8. Preheat the oven to hot (400 degrees)
9. Beat six egg whites (I always use one extra white to lighten my souffle if at all possible) with a pinch of salt until stiff.
10. Fold into the egg yolk mixture.
11. Butter a six cup souffle mold and generously sprinkle with granulated sugar (the sugar helps the egg whites climb up the sides of the dish).
12. Gently ladle in half the souffle mixture.
13. Top with soaked lady fingers.
14. Top with remaining souffle mixture.
15. Put in the hot oven and immediately reduce the heat to 375 degrees and bake for 30 minutes.
16. Sprinkle top with remaining tablespoon of sugar and bake for another ten minutes longer.
17. Serve immediately.
18. Mrs. Swanson liked her lemon souffles best and she served them with a dusting of powdered sugar, a tart clear lemon sauce and a dollop of fresh whipped cream. A gilded lily indeed.
19. I'm partial to the orange flavor and the hidden touch of the booze soaked ladyfinger. Imagine that!
