Note: You can substitute any yellow american cheese, but for best results try Schwan's cheese first.I got this recipe from my grammy. I think this is one of the best soups. This recipe even got a 5 yr old broccoli hater to like broccoli.
Ingredients:
20 ounces frozen chopped broccoli
water
2 chicken bouillon cubes
1 extra small onion, chopped
salt
pepper
10 ounces cream of chicken soup
6 ounces evaporated milk (1/2 of a regular size can)
less schwan's yellow american processed cheese slice
2 -3 teaspoons cornstarch
Directions:
1. Place broccoli and water in pot making sure to fill pot with water 1/3 full.
2. Add onion, salt and pepper.
3. When water is hot add bouillon cubes, cook until broccoli is tender. Add cream of chicken and milk. Break up cheese and add to soup stirring until melted.
4. Make a thickner with the cornstarch and some cold water to thicken soup. Thickner will be like water. Start with 3 tablespoons cold water mixed with cornstarch adding more water if cornstarch is not completely dissolved.
