A healthy casserole.
Ingredients:
5 medium carrots, thinly sliced
2 cups corn
1 medium onion, diced
1 cup quick-cooking barley
1/2 cup bulgur
1 teaspoon salt
1/2 teaspoon pepper
3 cups vegetable broth
1 (15 ounce) can black beans, rinsed and drained
2 cups shredded cheddar cheese
Directions:
1. Preheat oven to 350.
2. Combine all ingredients into a 13 x 9 baking dish coated with cooking spray.
3. Cover and bake at 350° for 50-55 minutes or until grains are tender, stirring once.
4. Top with cheese.
5. Bake an additional 3-5 minutes or until cheese is melted.
